Twice Baked Potatoes
My aunt said these were the best twice baked potatoes she's ever had. I can't say I disagree :)
- Follow Alton Brown's Baked Potato Recipe Except Substitute Olive Oil with Basil Flavored Oil for 5 Large Russet Potatoes
- Cut each potato in half
- Hollow out as much meat as possible and put in bowl
- Combine potato meat with:
- Milk (enough to make the mixture consistency creamy)
- Sour Cream (about 1 1/2 cups)
- Butter (1 Full Stick)
- Chives (About 1/4 cup)
- Scallions (about 1/4 cup)
- Crispy Bacon (about 8 strips)
- Grated Sharp Cheddar (about 1 loose cup)
- Fresh minced garlic (about 4 medium cloves)
- Salt (to taste)
- Pepper (to taste)
- Fill empty skins with mix.
- Cover with shredded sharp cheddar
- Bake on 400 for 25 minutes on convection
