Twice Baked Potatoes

My aunt said these were the best twice baked potatoes she's ever had. I can't say I disagree :)
  1. Follow Alton Brown's Baked Potato Recipe Except Substitute Olive Oil with Basil Flavored Oil for 5 Large Russet Potatoes
  2. Cut each potato in half
  3. Hollow out as much meat as possible and put in bowl
  4. Combine potato meat with:
  • Milk (enough to make the mixture consistency creamy)
  • Sour Cream (about 1 1/2 cups)
  • Butter (1 Full Stick)
  • Chives (About 1/4 cup)
  • Scallions (about 1/4 cup)
  • Crispy Bacon (about 8 strips)
  • Grated Sharp Cheddar (about 1 loose cup)
  • Fresh minced garlic (about 4 medium cloves)
  • Salt (to taste)
  • Pepper (to taste)
  1. Fill empty skins with mix.
  2. Cover with shredded sharp cheddar
  3. Bake on 400 for 25 minutes on convection
